If your pantry is anything like mine, it’s stocked with s’mores essentials (marshmallows, graham crackers, chocolate) from now until Labor Day. And I love putting a fresh spin on the flavors of a classic campfire s’more, whether that’s a s’mores pie, s’mores cookies, or no-bake s’mores bars.
These Golden Graham s’mores bars are another easy no-bake dessert, a variation of homemade Rice Krispie treats made with graham cracker cereal. They’re loaded with gooey marshmallows and melted milk chocolate chips. It’s all the delicious, gooey, chocolatey flavors of a s’more, minus the campfire (and oven)!
Why Golden Graham S’more Bars are the Best Summer Dessert
- No baking. These are the best way to satisfy a s’mores craving any time. No open fire or oven needed.
- Only 4 ingredients. Marshmallow treats are famously pantry-friendly, and these Golden Graham bars are no exception.
- Great for sharing. Golden Graham treats make the perfect potluck dessert. They take minutes to make and cool down fast, so they’re excellent for last-minute gatherings and barbecues.

Grab These 4 Ingredients
Here’s a quick look at the ingredients needed for these gooey marshmallow treats. See the recipe card for the complete measurements.
- Butter – I like to use salted butter, but unsalted will work, too.
- Mini Marshmallows – If you only have large marshmallows, chop them into halves or quarters so they’ll melt more quickly.
- Golden Grahams Cereal – The classic graham cracker-flavored toasted cereal. You could also use graham crackers and crush them into small, cereal-sized chunks. Or, make this recipe as Cinnamon Toast Crunch Rice Krispie treats.
- Milk Chocolate Chips – You could also use semi-sweet or dark chocolate chips.

How to Make Golden Graham S’mores Bars
If you’ve ever made Rice Krispie treats (and even if you haven’t), you can make Golden Graham bars. The method is the same, and it’s super easy:
- Melt the marshmallows. Start by melting butter and a bag of mini marshmallows over low heat.
- Add cereal. Take the melted marshmallows off the heat, and stir in the Golden Grahams.
- Add mix-ins. Let that sit for a couple of minutes, then fold in about 2 cups of extra mini marshmallows and the chocolate chips. Your bar mixture will be difficult to stir, but that’s OK.
- Set. Press the s’mores mixture evenly into a greased 9×9-inch pan. Let the treats cool for at least 15 minutes before cutting them into squares. Enjoy!
FAQ
Sure! Double the recipe for the larger pan size. The bars may be a bit thicker.
Golden Grahams contribute to an authentic s’mores flavor. You could also crush up graham crackers into smaller pieces to make these treats. I’ve also heard from readers who’ve substituted the Golden Grahams with other cereals, like Cinnamon Toast Crunch, though it will impact the flavor.
Yes, you can make your bars with chopped Hershey’s milk chocolate bars. Chopped chocolate will melt more in the marshmallow mixture than chocolate chips.

Storage
These Golden Graham s’mores bars last up to 3 days when covered at room temperature. Air is the nemesis of any marshmallow cereal bar, as it causes them to harden quickly. Keep the bars airtight. The extra marshmallows in this recipe keep the bars soft, but even that won’t help if they’re not covered properly.

Golden Grahams are my favorite cereal and I’ve made them into treats before, but DUH, never thought to add the chocolate. Seriously, and I call myself a food blogger. I bow to the genius!! Yum.
Oh my gosh! I’m pretty sure I used to have something like these when I was little, but I forgot all about them! They are awesome and so delicious! Also – thank you for the ‘that’s what she said’ joke! I’ve been on a kick with those lately and it brought a smile to my face to see someone else thinking the same way as me 🙂
I need a few of these like…now.
And by a few, I mean the whole pan.
Thanks for linking up my Smores recipe and whoa Nelly, you outdid yourself with these. They look so gooey, so wonderful, so….perfect!
Golden Grahams are definitely underrated! I always keep boring healthy stuff like Kashi at home. But whenever I’m saying at my parents, I always do a happy dance for breakfast because I know they’ll have GG. 🙂
I love S’mores in pretty much any form!
