Ingredients You’ll Need

Below is a quick summary of what you’ll need to turn a box of cake mix into delicious and soft strawberry cookies. Remember to scroll to the recipe card for the full amounts and recipe details.

  • Strawberry Cake Mix: Choose your favorite brand of cake mix. You can skip the other ingredients on the box, as we’ll be doctoring it up with ingredients of our own.
  • Cream Cheese: I recommend using the cream cheese that comes in a brick (not a tub). Take the cream cheese out of the fridge about a half hour before you start, to let it come to room temperature. This makes it easier to combine with the other ingredients.
  • Butter, Egg: You’ll need salted or unsalted butter, and one egg to add richness and structure to the cookies. Both should also be at room temperature.
  • Powdered Sugar: I give my strawberry cookie dough a quick roll in powdered sugar for extra sweetness. It also gives these cake mix cookies a lovely crinkle effect after they’re baked.

How to Make Strawberry Cookies From Cake Mix

The dough for your strawberry cake mix cookies comes together in minutes. After, all it takes is some chilling in the fridge before they’re ready for the oven. Here’s how to make perfectly fluffy cake mix cookies:

  • Make the cookie dough. First, cream together cream cheese and butter, followed by an egg. Gradually mix in the dry cake mix until a thick dough forms.
  • Chill the dough. Next, you’ll pop the dough into the fridge to chill, just enough to make the dough less sticky to handle. It also helps to control any spreading once the cookies are in the oven.
  • Portion and roll out the cookies. After about an hour, take your cookies out. While the oven preheats to 350ºF, roll the cookie dough into 1-inch balls. Finally, coat the balls in powdered sugar and then place them onto a parchment-lined baking sheet.
  • Bake. Bake the cookies for 10 minutes, until they’re just set in the centers. Be careful to not overbake them! Afterward, move the cookies to a wire rack to cool.

Tips for Success

Anyone can make these strawberry cake mix cookies, and they’re almost guaranteed to come out without a hitch. Keep these final tips in mind:

  • If you don’t have a stand mixer, your cookies will still turn out perfectly. The key is to soften ingredients like cream cheese and butter beforehand, and you shouldn’t have any problems mixing these up with a spoon or spatula.
  • Don’t overbake the cookies. Leaving the cookies slightly underbaked is super important for a soft, chewy texture. It’s easy to overbake them, which dries them out. Once you see the pink edges beginning to brown, take the cookies out of the oven.
  • Results may vary depending on the box cake mix you use. Every brand is different, and your cookies may bake up differently as a result. Some may spread more while others turn out pudgier or fluffier. The cookies will still taste great! It’s just something to keep in mind.
  • More variations. If strawberry isn’t your thing, you can absolutely make this recipe with any cake mix variety or flavor you’d like. See below for variation ideas!
