I am super into browning butter, just like any good food blogger is, I guess. And isn’t it a strange world we live in where food blogger is an actual job? Freaking crazy. Awesome, yes…but also crazy.
But you know what is actually NOT awesome….is buying a car when you are a food blogger. Filling out the “occupation” slot on the credit application is very confusing. To both me and the credit manager guy.
So like, do I put BLOGGER? That sounds so…I don’t know…not like a real job?
And then ALL THE QUESTIONS you get after you hand over the application…you make MONEY blogging? How does that work? Where does the money come from? How? HOWWW?
So yeah, I ended up putting “Website Publisher”, which I thought at the time sounded super grown up and profesh. Until the guy came out and asked me what that meant. And I had to say blogger anyway.
Anyway. Next time I will just write “Food Blogger” as my occupation with my URL next to it.
Let’s now talk blondies. With browned butter, because it’s my JOB.
Banana Blondies
These are Banana Blondies. And they are simple simple. Promise.
How to Make These Amazing Banana Bars
Grab you a banana and some brown sugar.
Then melt your butter. Or brown it if you’re nasty.
Mix the butter and brown sugar together.
Mix in the rest of your ingredients…including the banana, that you need to mash, btw.
And then spread it in to a lined pan…
Bake it up for about 25 minutes. And if you want (you want) make some brown sugar frosting. It’s so yum. and when they’re cooled spread it all up on there…
I swear you need to make these. They are THAT good.

Description
These Banana Blondies with brown sugar frosting are out of this world delicious. They’re perfectly flavored with banana and literally melt in your mouth!
Ingredients
Blondies
- 1/2 cup butter, melted and if desired browned
- 1 cup light brown sugar
- 1 egg
- 1 1/2 tsp vanilla
- 1/4 tsp salt
- 1 cup flour
- 1/2 cup mashed banana (1 medium banana)
Brown Sugar Frosting
- 1/4 cup butter
- 1/2 cup light brown sugar
- 2 Tbsp milk
- 1 cup powdered sugar
Instructions
Blondies
- Preheat oven to 350°. Line an 8×8 baking dish with foil and spray with cooking spray. Set aside
- In bowl of stand mixer combine melted (or browned) butter and sugar. Mix until combined. Add in egg and vanilla and continue mixing until incorporated. Stir in salt, flour and banana until batter is smooth and even. Spread in prepared pan.
- Bake for 25-30 minutes until center is set.
- Transfer pan to wire rack to cool.
- Frost the blondies when they are mostly cooled.
Brown Sugar Frosting
- In a medium saucepan melt butter. Add brown sugar and milk and stir until mixture comes to just a boil. Remove from heat, allow to cool for 5 minutes.
- Stir in powdered sugar with a whisk.
- Spread on top of blondies and allow frosting to set and blondies to cool completely before cutting into squares.
Notes
If you choose to brown the butter, melt butter in saucepan and continue cooking, once it’s melted by swirling the butter in the pan until butter reaches a deep golden brown color.

My Bible Study group raved over these! Was thrilled to share the recipe.
★★★★★
My frosting turned out grainy, what did I do wrong?
I’ve made this recipe so many times over the years and each time it’s such a crowd pleaser. The bloodied are moist and the frosting is amazing. I made these and brought them work once and a colleague asked for a batch of just the frosting for his birthday. They’re the perfect treat to make when you have an over ripe banana but not enough to make banana bread with!
★★★★★
Do you also brown the butter for the frosting or only for the blondies?
Just for the blondies 🙂
I always do both and it’s delicious!
I made this recipe but without the frosting (trying to save on calories). They were absolutely delicious. My whole family loved them too! Thanks for sharing such a great recipe.

Has anyone adapted this recipe to fit a cookie sheet? I have a lot of bananas to use, would x4 fit a cookie sheet?
Did you try? I was wondering the same thing.
I double the cake ingredients and it makes a nice 13×9 dish. I do not double the frosting though, it was too much the first time I did.

I double the recipe and bake in a 9×13. I listened to commenter Kathy’s advice and did not double the frosting recipe the first time I doubled the bar part of the recipe and it was only enough to pour over half the pan, unless I spread it to the point of barely even being a glaze. Had to quickly make another batch of the frosting to cover the other half of the blondies. I would recommend doubling the frosting if you bake in a 13×9.

Oh my! This is AMAZING! Searched the internet looking for recipe to use up ripe bananas and finally settled on this. I am so glad! Yes it is super sweet, but I keep going back to cut little bites and have eaten a whole row almost! Thank goodness I doubled the recipe!

It’s pretty much just an extra moist mini banana cake more than a blondie in my opinion. I wasn’t super impressed with it. I thought it was too sugary and not that exciting, but the rest of my family was absolutely in LOVE with it. They are addicted!! It barely lasted three days.. Will definitely be making it for them again. Might try adding some spice or something to give them a bit more umph though
★★★★
Can I replace the milk with rum, for the frosting?
★★★★★
sure!
WE LOVE THIS RECIPE! These are easier to make than regular old banana bread and they taste even better! The icing reminds me of my mother’s pralines! The only addition I made was toasted chopped pecans, which I added to the batter. These are absolutely delicious and moist. This is in my permanent recipe box now!

What a great idea adding the pecans!
