I am super into browning butter, just like any good food blogger is, I guess. And isn’t it a strange world we live in where food blogger is an actual job? Freaking crazy. Awesome, yes…but also crazy.

But you know what is actually NOT awesome….is buying a car when you are a food blogger. Filling out the “occupation” slot on the credit application is very confusing. To both me and the credit manager guy.

So like, do I put BLOGGER? That sounds so…I don’t know…not like a real job?

And then ALL THE QUESTIONS you get after you hand over the application…you make MONEY blogging? How does that work? Where does the money come from? How? HOWWW?

So yeah, I ended up putting “Website Publisher”, which I thought at the  time sounded super grown up and profesh. Until the guy came out and asked me what that meant. And I had to say blogger anyway.

Anyway. Next time I will just write “Food Blogger” as my occupation with my URL next to it.

Let’s now talk blondies. With browned butter, because it’s my JOB.

Description

These Banana Blondies with brown sugar frosting are out of this world delicious. They’re perfectly flavored with banana and literally melt in your mouth!

Ingredients

Scale

Blondies

  • 1/2 cup butter, melted and if desired browned
  • 1 cup light brown sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1 cup flour
  • 1/2 cup mashed banana (1 medium banana)

Brown Sugar Frosting

  • 1/4 cup butter
  • 1/2 cup light brown sugar
  • 2 Tbsp milk
  • 1 cup powdered sugar

Instructions

Blondies

  1. Preheat oven to 350°. Line an 8×8 baking dish with foil and spray with cooking spray. Set aside
  2. In bowl of stand mixer combine melted (or browned) butter and sugar. Mix until combined. Add in egg and vanilla and continue mixing until incorporated. Stir in salt, flour and banana until batter is smooth and even. Spread in prepared pan.
  3. Bake for 25-30 minutes until center is set.
  4. Transfer pan to wire rack to cool.
  5. Frost the blondies when they are mostly cooled.

Brown Sugar Frosting

  1. In a medium saucepan melt butter. Add brown sugar and milk and stir until mixture comes to just a boil. Remove from heat, allow to cool for 5 minutes.
  2. Stir in powdered sugar with a whisk.
  3. Spread on top of blondies and allow frosting to set and blondies to cool completely before cutting into squares.

Notes

If you choose to brown the butter, melt butter in saucepan and continue cooking, once it’s melted by swirling the butter in the pan until butter reaches a deep golden brown color.

  1. WOW…these are incredible! I baked them tonight for the first time – 5 hours later they’re gone and have officially made it into my written recipe book. My husband has already requested them again for next weekend. I browned the butter, trust me on this and take the extra few minutes to do it if you have the time. 🙂 Thank you for this amazing recipe!

  2. Hi there! Newbie question – when browning butter, would I need to add an additional TB to make up for lost volume? I think I read somewhere that this is the general rule of thumb but not sure I trust my memory. 🙂 Thanks in advance and I’ll be sure to come back with a review once I’ve made these!

  3. Absolutely amazing,,,, Such an easy recipe. So tasty but don’t miss any steps like putting tin foil on the Pan.

  4. Wow! Made these for the first time last night for a gathering what a hit! I followed the recipe exactly except doubled it and used a 9x 13 pan. I also added a cup of chopped walnuts on top of frosting. I served it like a cake. It was wonderful and super moist! Super easy recipe!

  5. Hello Shelly,

Can I substitute the banana with canned pumpkin puree? I am not sure if it will affect how sweet the blondies will be.

    Thank you, Priscilla

  6. I doubled the recipe, using three bananas and baked it for exactly 30 minutes in a 9×13″ pan. I simply grabbed my pink salt grinder and ground the salt in the brownies pretty course but that turned out great! I only had buttermilk in the house so I used that for the frosting and it gave it a slight sour twang that is so perfect with all the brown sugar sweetness along with the occasional salty bite. Phenomenal. Thank you for the base idea/recipe. It’s a keeper!

    1. I just made these today and they were fantastic and I was just thinking I have some extra bananas I still need to use up, so I may go at it again with a double batch, thanks for sharing your thoughts…I was thinking 9×13 pan too and was gonna try 25-30 min checking as I go. Shelly, thanks for the original recipe SO good-that frosting OH my goodness!!

  7. Brown butter is nearly an unknown treat. Absurd but true. This treat is going into my computer records. Can’t wait to share this with my big sister!

  8. Just coming back to say I’ve made these countless times over the years and they are always a crowd pleaser! Thank you so much
