Banana Blondies Woth Brown Sugar Frosting
These are a great alternative to banana bread, and perfectly easy to make! They’re great to serve at parties, or for a sweet lunchbox treat!

How to Make These Amazing Banana Bars
Grab you a banana and some brown sugar.

Then melt your butter. Or brown it if you’re nasty.
Mix the butter and brown sugar together.

Mix in the rest of your ingredients…including the banana, that you need to mash, btw.

And then spread it in to a lined pan…

Bake it up for about 25 minutes. And if you want (you want) make some brown sugar frosting. It’s so yum. and when they’re cooled spread it all up on there…

I swear you need to make these. They are THAT good.

Description
These Banana Blondies with brown sugar frosting are out of this world delicious. They’re perfectly flavored with banana and literally melt in your mouth!
Ingredients
Blondies
- 1/2 cup butter, melted and if desired browned
- 1 cup light brown sugar, packed
- 1 egg
- 1 1/2 teaspoon vanilla
- 1/4 teaspoon kosher salt
- 1 cup all purpose flour
- 1/2 cup mashed banana (1 medium banana)
Brown Sugar Frosting
- 1/4 cup butter
- 1/2 cup light brown sugar
- 2 tablespoon milk
- 1 cup powdered sugar
Instructions
Blondies
- Preheat oven to 350°F. Line an 8×8 baking dish with parchment paper and coat with nonstick spray. Set aside
- In a large saucepan melt the butter (and if desired continue cooking the butter until it’s amber in color, stirring frequently *see note). Allow the butter to cool for 5 minutes and stir in the brown sugar, vanilla, and salt to combine. Stir in the egg until smooth and finally the flour and mashed banana. Spread in prepared pan.
- Bake for 30 minutes, or until the center is set.
- Transfer pan to wire rack to cool.
- Frost the blondies when they are mostly cooled.
Brown Sugar Frosting
- In a medium saucepan melt butter. Add brown sugar and milk and stir until mixture comes to just a boil. Remove from heat, allow to cool for 5 minutes.
- Stir in powdered sugar with a whisk.
- Spread on top of blondies and allow frosting to set and blondies to cool completely before cutting into squares.
Notes
If you choose to brown the butter, melt butter in saucepan and continue cooking, once it’s melted by swirling the butter in the pan until butter reaches a deep golden brown color.

I made these for my boyfriend today and he said that if I ever make them for anyone else he would be so mad! They were fantastic! I did add a little vanilla to the icing because I thought it tasted like powdered sugar.
I made theses last night-very moist, however I would have tweaked the recipe a little ie;more banana flavoring-perhaps some banana extract in the frosting?
I was a little nervous about baking these with no baking powder, but they came out just fine, super moist and yummy! I also doubled the recipe and baked them in a 9×13 pan with no problems. The only downfall is these are so good you might eat them all yourself!
Did you switch up the temperature or cooking time?
Just made these banana blondies tonight at my job- I cook dinners at our community center. Everyone raved about them. They were so easy and most importantly incredible delicious! The only change I made was I added a bag of mini chocolate chips to the batter. Oh my – yummy! Thanks for the great recipe!!
Shelly – these were so delicious! My sweet-tooth of a husband practically gobbled down the entire pan. My favorite part was how quickly it all came together. I was craving something baked late one night and these took no time at all to whip up and throw in the oven. I only had dark brown sugar on hand, so I reduced it to 3/4 cup and I used 1 tsp vanilla + 1/2 tsp almond extract to bring out the banana flavor. I also added 1/2 cup chopped pecans to the batter and sprinkled a few more on top of the warm glaze. I will definitely be making these again – thanks so much!
Three words! OMG! ..or is that three letters?! ..these are ridiculous, like in freaking amazing! I can’t get over how moist they are and how just one banana,(ripe as heck mind you), brought such banana flavour to these! ..love your blog, love your recipes!
O.M.F.G!!!!!!!!
Curse the gods that I’ve lived the first 34 years of my life without this recipe! Holy shit these blondies are beyond delicious!
On a whim I doubled the recipe to use up more bananas (thank god I did!), and substituted 1/4 of the flour for almond flour (just because I’m trying to use it up).
You need to win some sort of award for sharing this recipe!
OH MY GOODNESS!!! These came out so moist and delicious! My husband couldn’t wait to have more! He asked me to add this to the favorites list! 5 Stars!
Made these the other day, and omg they are Amazing! They’re moist, super flavourful and so easy to make. The brown sugar frosting is to die for! My kids Loved them too. Pretty sure I’ll be making another batch this weekend ????
Not sure what’s up with the question marks, was supposed be a smiley face at the end haha
I was wondering how long these are good for. I would like to make them and send them in a care package to my brother in Afghanistan. If not do you have any recipes that are care package friendly?
Thanks
