These Cookies and Cream Chess Squares are ridiculously easy and super fudgy and soft. You guys will love these!

Cookies and Cream Chess Squares...simple bars that can be whipped up quickly and everyone will love!

When you’re dealing with Oreos and baking, there seems to be endless possibilities.

I, myself, have dipped into the “Cookies and Cream Pool” a time or two.

Dude, I need to get more creative!

Anyway, I have never made Chess Squares here on Cookies and Cups…so I decided that needed to happen.

Actually I decided that before I actually knew what a Chess Square was. So I looked it up.

Turns out Chess Squares are what I know as Gooey Butter Cake.

I could be wrong, and I am sure someone will tell me what the exact difference is…but the recipes I found online are remarkably similar…just “rebranded”. Not sure which came first. Kinda don’t really care.

Because call them what you will, they are delicious!!

I mean, chocolate cake mix, cream cheese and Oreo cookies are players here. It’s like the baking trifecta.

Let’s have a look…

Cookies and Cream Chess Squares...they start with a cake mix and are so so easy!

And since these all start with a cake mix base they go together super fast. It takes longer to let your cream cheese come up to room temp, honestly!

Cake mix base for Cookies and Cream Chess Squares

Coarsely crush your Oreos…I prefer large hunks in this one!

Chopped Cookies

Mix them with some cream cheese and powdered sugar and spread it all on top.

Cream Cheese Topping

Bake the whole thing together and you got this…

makes 24 squares


Ingredients

Scale
  • 1 box chocolate cake mix
  • 4 eggs, divided
  • 1/2 cup butter, melted
  • 8 oz cream cheese, room temperature
  • 3 cups powdered sugar
  • 1 1/2 tsp vanilla
  • 15 Oreo cookies, coarsely crushed

Instructions

  1. Preheat oven to 325°
  2. Lightly spray a 9×13 pan with cooking spray.
  3. Mix cake mix with 1 egg and melted butter until combined. Mixture will be thick. Press into prepared pan. Set aside.
  4. In bowl of stand mixer beat cream cheese until smooth, add in remaining eggs and vanilla and mix, scraping sides as needed. Add in powdered sugar and mix until combined. Finally stir in crushed Oreos.
  5. Spread this mixture onto chocolate base and bake for 40-50 minutes until center is set.
  6. Remove from oven and allow to cool.

Notes

store airtight in refrigerator.

  1. I have made this several times since discovering this recipe. Usually I’ll add Nutella or Amazon’s salted cocoa truffle spread to the cream cheese mixture. This last time I (somehow) misread the ingredients and read 15 Oreos as 15oz Oreos. I was using Girl Scout S’mores cookies. The package was 8.5oz. So I used two packages! It wasn’t until I poured them all in and started mixing them into the cream cheese that I thought it looked like a lot of cookies! It’s delicious but *very* sweet because of the extra super sweet cookies. LOL And super easy to make (and eat).






  2. I made the recipe but didn’t realize you had also put foil to line your baking pan and not just spray cooking spray like the instructions said…mine didn’t cook properly but maybe I’ll try it again!

  3. im a very novice baker! WHen you say “4 eggs divided” do you mean to only use the yolks when mixing the cream cheese? thanks!

    1. That means you will need 1 egg for one step and 3 eggs for another step 🙂 It doesn’t mean to literally divide the eggs. Thanks for asking, and hope I clarified it!
