Cream Cheese Brownie Cookies...simple fudgy cookies made with brownie mix!

These Cream Cheese Brownie Cookies are ridiculously gooey and fudgy! They’re also super simple made with a brownie mix! This cream cheese brookie recipe is the chocolate dessert of your wildest dreams!

So lately I have been working on recipes for the book basically like all the dang time. And all the recipes (good, bad and ever uglier) have to be tested. Which means I can either consume 40 million calories a day…OR I can do my best to make my neighbors fat. Unfortunately I have inadvertently chosen both of these options. But as long as I can keep my friends fat…you know how it goes.

Easy Cream Cheese Brownie Cookie Recipe

Anyhow, with all the food, I have been having people over for dinner/dessert quite often (my husband can only eat so many cupcakes). Luckily I have some pretty fab foodie friends and they have given me some pretty great feedback. Needs caramelized onions (done). Too much tequila (shocker). A tiny bit too creamy (easy fix). It’s a process.

Anyhow, what I’ve found is that although I’m basically using my friends as a focus group, they don’t seem to mind as long as there is dessert involved. And aren’t cookies always the answer?  Enter these super easy…crazy delicious…Cream Cheese Brownie Cookies.There are only a few ingredients needed for these super thick, gooey cookies…even my non-chocolate loving husband went nuts for these. And that is saying a lot!

Cream Cheese Brownie Cookies...SIMPLE cookies made with a brownie mix that are super chocolatey and gooey!

How to Make Brownie Cookies From Mix:

Just grab a box of brownie mix. I love the Chocolate Fudge Brownie Mix from Pillsbury for this recipe.

Mix in some cream cheese, butter, an egg and white chocolate chips. That’s it.

The dough will be super thick…but use a large cookie scoop to make them all even. Love my cookie scoop.

Bake them until they are set around the edges. The tops will still seem a bit underdone…it’s ok, you want a gooey cookie.

See? Gooey, thick, chocolatey with the perfect amount of white chocolate chips throughout!

Description:

These Cream Cheese Brownie Cookies are ridiculously gooey and fudgy! They’re also super simple made with a brownie mix! This cream cheese brookie recipe is the chocolate dessert of your wildest dreams!


Ingredients:

  • 1 (19.5 oz) Brownie Mix
  • 4 oz cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 1 egg
  • 2 cups white chocolate chips

Instructions:

  1. Preheat oven to 350°
  2. Line baking sheet with parchment paper, set aside.
  3. In bowl of stand mixer beat cream cheese and butter until smooth. Add in egg and continue mixing until incorporated.
  4. Turn mixer to low and add in brownie mix until dough comes together. It will be very thick.
  5. Stir in white chocolate chips.
  6. Using large cookie scoop, scoop dough onto lined pan and bake for 10-12 minutes until edges are set.
  7. Transfer to wire rack to cool.

    I absolutely love these! I used milk chocolate chips instead of white chocolate (not a fan of white chocolate). The end result was AMAZING. Family approved with raving reviews. I will definitely be making these again and again. Thanks for the recipe.

        Hi Shelly – How are you? Question – The brownie mix you have shown here that you said you usually use – I can only find it in 18.4 oz, not 19.5 oz that you have listed in the recipe. Can you still use it and do you need to change any of the other measurements as a result?

    These cookies are FANTASTIC! They are so easy to make, but are always such a HUGE hit! I’ve used a mocha brownie mix in the past that was to die for, but haven’t been able to find that this year. So, I’m going to improvise and add some instant coffee to the batch to see if that will give me a nice mocha flavor. 🙂

    Love these cookies. I didn’t use white chocolate chips (personal preference for semi-sweet and milk chocolate) but that doesn’t make these anything less than 5 stars. Thank you for a great way to use up my overstocked brownie mixes.

    These are AMAZING!!! When I gave one to my husband to try he said “I hope you made at least 1,000 more of these!!” I used milk chocolate brownie mix because that’s what a accidently bought and I haven’t tried making them with fudge brownies so next time I will try fudge but the milk chocolate brownie mix is really good in case that’s what you bought or already have! These are my new go-to when I have to go somewhere and bring something!!!

    These are amaaaazing. I made them about a month ago and froze the leftovers, which my boyfriend and I proceeded to polish off directly out of the freezer!! Right now I have a batch in the oven for made with the Pillsbury chocolate mocha brownie mix. The batter is so good, I know these will be amazing as well. Only change I’ve made each time is to use three kinds of chips – white chocolate, butterscotch and bittersweet. TOO GOOD. ????

Totally dumb question – do I make the brownie mix according to the package with eggs and oil first or do you only use the brownie mix powder, straight from the box? Thanks!     Sadly, this recipe didn’t work for me either. Followed it to a T, tried adjusting the time in the oven with each proceeding unsuccessful batch and the kept falling apart. I’ve been baking for years, I don’t know what went wrong. I’m very sad 🙁
