Description

These Banana Blondies with brown sugar frosting are out of this world delicious. They’re perfectly flavored with banana and literally melt in your mouth!

Ingredients

Scale

Blondies

  • 1/2 cup butter, melted and if desired browned
  • 1 cup light brown sugar, packed
  • 1 egg
  • 1 1/2 teaspoon vanilla
  • 1/4 teaspoon kosher salt
  • 1 cup all purpose flour
  • 1/2 cup mashed banana (1 medium banana)

Brown Sugar Frosting

  • 1/4 cup butter
  • 1/2 cup light brown sugar
  • 2 tablespoon milk
  • 1 cup powdered sugar

Instructions

Blondies

  1. Preheat oven to 350°F. Line an 8×8 baking dish with parchment paper and coat with nonstick spray. Set aside
  2. In a large saucepan melt the butter (and if desired continue cooking the butter until it’s amber in color, stirring frequently *see note). Allow the butter to cool for 5 minutes and stir in the brown sugar, vanilla, and salt to combine. Stir in the egg until smooth and finally the flour and mashed banana. Spread in prepared pan.
  3. Bake for 30 minutes, or until the center is set.
  4. Transfer pan to wire rack to cool.
  5. Frost the blondies when they are mostly cooled.

Brown Sugar Frosting

  1. In a medium saucepan melt butter. Add brown sugar and milk and stir until mixture comes to just a boil. Remove from heat, allow to cool for 5 minutes.
  2. Stir in powdered sugar with a whisk.
  3. Spread on top of blondies and allow frosting to set and blondies to cool completely before cutting into squares.

Notes

If you choose to brown the butter, melt butter in saucepan and continue cooking, once it’s melted by swirling the butter in the pan until butter reaches a deep golden brown color.

I’m just shocked he didn’t know who you were. Can’t believe you had to explain yourself. Ugh. Duhhhh, I make the best desserts on the internet. I’m S-H-E-L-L-Y.

I guess I’m nasty, because I’m definitely going to brown that butter! Best line I’ve heard in awhile! These look delightful!

    1. Getting ready to go on a vacation to stay in a cabin and needed an easy , portable dessert, and I had a bunch of ripe bananas to get rid of . I doubled the recipe and used about a trap of baking powder also, along with 4 1/2 small very ripe bananas. I make a lot of banana cakes,, and I have to say, this my be my new favorite! The icing was divine! (Of course, I used heavy cream instead of milk, just because I had some). My 12 year olds eyes lit up when he took his first bite of his banana bar, and he said , “mmmm”. Score!

I love how supremely moist these babies are! My #1 fave thing to make is blondies. In any way I can. 1 stick of butter, 1 c of flour, 1 c brown sugar…you can never go wrong. Genius to put bananas in them!! And the frosting. Brown sugar frosting is the best! pinned
