Banana Blondies Woth Brown Sugar Frosting
These are a great alternative to banana bread, and perfectly easy to make! They’re great to serve at parties, or for a sweet lunchbox treat!

How to Make These Amazing Banana Bars
Grab you a banana and some brown sugar.

Then melt your butter. Or brown it if you’re nasty.
Mix the butter and brown sugar together.

Mix in the rest of your ingredients…including the banana, that you need to mash, btw.

And then spread it in to a lined pan…

Bake it up for about 25 minutes. And if you want (you want) make some brown sugar frosting. It’s so yum. and when they’re cooled spread it all up on there…

I swear you need to make these. They are THAT good.

Description
These Banana Blondies with brown sugar frosting are out of this world delicious. They’re perfectly flavored with banana and literally melt in your mouth!
Ingredients
Blondies
- 1/2 cup butter, melted and if desired browned
- 1 cup light brown sugar, packed
- 1 egg
- 1 1/2 teaspoon vanilla
- 1/4 teaspoon kosher salt
- 1 cup all purpose flour
- 1/2 cup mashed banana (1 medium banana)
Brown Sugar Frosting
- 1/4 cup butter
- 1/2 cup light brown sugar
- 2 tablespoon milk
- 1 cup powdered sugar
Instructions
Blondies
- Preheat oven to 350°F. Line an 8×8 baking dish with parchment paper and coat with nonstick spray. Set aside
- In a large saucepan melt the butter (and if desired continue cooking the butter until it’s amber in color, stirring frequently *see note). Allow the butter to cool for 5 minutes and stir in the brown sugar, vanilla, and salt to combine. Stir in the egg until smooth and finally the flour and mashed banana. Spread in prepared pan.
- Bake for 30 minutes, or until the center is set.
- Transfer pan to wire rack to cool.
- Frost the blondies when they are mostly cooled.
Brown Sugar Frosting
- In a medium saucepan melt butter. Add brown sugar and milk and stir until mixture comes to just a boil. Remove from heat, allow to cool for 5 minutes.
- Stir in powdered sugar with a whisk.
- Spread on top of blondies and allow frosting to set and blondies to cool completely before cutting into squares.
Notes
If you choose to brown the butter, melt butter in saucepan and continue cooking, once it’s melted by swirling the butter in the pan until butter reaches a deep golden brown color.

This recipe is absolutely delicious people. You have got to try it. I actually Quadrupled this recipe and used a 13×9 metal Baking pan. For the frosting I only doubled the recipe there and it was the perfect amount of frosting for my cake. The cake was approximately 1.5 inches thick. It was moist and not too sweet yet not too bland either. I thought that I had no nuts on hand but after I had popped it into the oven for about 15 minutes I found a bag of slivered almonds in my pantry. I quickly chopped them up on a cutting board and sprinkled them over the cake. By that time I was just barely able to press them down a little bit so that they stayed in the cake when zi added the frosting later on. The only problem that zi had was that twice I had went to the fridge and noticed that half of the pan was gone lol. One child snuck and ate half the pan then later on the other child snuck and ate half of the other half that hadn’t been snuck before. The next morning the first thing my daughter said to me was, “Is there anymore banana cake mom?” Then today when my son came back from his dad’s it was the first thing he mentioned as well.”Mom, is there anymore of that cake? I also loved it. I am not too much into sweets but I love banana bread and I really liked these tremendously. Thank you so much for such a great recipe. It will be in our family for years to come !!!

I just made these and forgot to mark recipe went to go back gone!! I panicked couldn’t remember who posted! Found after looking for 10 minutes you can bet your bottom bippy I got it marked now!!! Lol? Thanks I had bananas needed to be used so they are in the oven!!.

I just made these. Browning the butter is a must. I also browned the butter in the icing. Wow! So much flavor! It’s like a butterscotch banana blondie. Wait until my 3 teenage boys and their friends taste these! It’s a good thing I made 2 batches.
Absolutely delish! I followed your recipe to the letter the 1st couple times I made them, but changed it up a little this last time when I made a triple batch. I subbed out 1/2 c of butter for 2/3 c of peanut butter and reduced the brown sugar to 2 c and added 1/2 c of white sugar – making it 2 1/2 total cups of sugar instead of 3 c. I also made a cream cheese frosting instead of the brown butter. I can’t decide which version is better…. they are both amazing!
