I LOVE these Funfetti Gooey Butter Cookies! They’re made with cream cheese, butter and Funfetti Cake Mix. These cookies are SO soft and yummy you’ll want to make them over and over again!

Ok y’all.

Sometimes you just need a cookie to make you happy. Because sometimes it’s perfectly ok to eat your feelings.

I speak from personal experience.

Also, can we just talk about people who won’t eat cake mix for a quick second…Yep, I know you’re out there.

And really, I appreciate you. I really do.

But these cookies can’t be made without it.

But today we’re getting down and dirty and making super yummy Gooey Butter Funfetti Cookies.

Because they can’t be Funfetti without cake mix. That’s a true fact. AND I made a short little video to show you just how easy they are!

How to Make Funfetti Gooey Butter Cookies

I started with a box of Funfetti, Cream Cheese and some Challenge Butter

Challenge Butter

Use that whole box of cake mix.

Oh, and I added some extra sprinkles into the dough to amp up the colorfullness. Yep, that’s a word.

Form the dough into balls and roll in powdered sugar…

Funfetti Gooey Butter Cookies

Description:

I LOVE these Funfetti Gooey Butter Cookies! They’re made with cream cheese, butter and Funfetti Cake Mix. These cookies are SO soft and yummy you’ll want to make them over and over again!


Ingredients:

  • 8 oz cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 1 egg
  • 1 box Funfetti cake mix (15.25 oz)
  • 1/4 cup sprinkles
  • 1/4 cup powdered sugar

Instructions:

  1. In bowl beat cream cheese and butter together until smooth, add in egg and continue mixing, scraping sides as necessary.
  2. Add in the cake mix and beat until combined and finally stir in extra sprinkles.
  3. Chill dough for about an hour.
  4. Preheat oven to 350° Line a baking sheet with parchment paper and set aside.
  5. Form dough into 1 inch balls and roll in powdered sugar. Place on prepared baking sheet 2″ apart and bake for about 10 minutes.
  6. Allow to cool on baking sheet for 2-3 minutes and then transfer to wore rack to cool completely.

store airtight at room temperature for up to 3 days

    Do you use an ungreased cookie sheet? Parchment paper? The bottom didn’t turn out too good for me when I rolled the whole ball in powdered sugar.

    i can’t say i was a big fan of this recipe. i modified it by using strawberry cream cheese instead of original. the dough was super sticky and i was getting very frustrated trying to roll it lol. I’m still a beginner baker so i think i did decent.

    Made these last night – exactly as written – but they were much more cakey than gooey. Any idea why that might be? Also had too cook them 15 minutes (first batch was nearly raw, but not gooey, with only 10). Flavor was good, but they were even better when I used a basic powdered sugar glaze + a tiny bit of almond extract drizzled over cookies when they were cooled. Definitely a very “Happy Birthday” recipe for cookie lovers.

    Thanks for fun recipe. Just one note, your blog is very hard to use unless on a computer. From my iPad and phone the ads kind of make it a nightmare and the content takes forever to load. We made these today despite the challenge and they were a big hit!

    First time baking these ive seen them a lot lately and i have to say they are delicious . i sprinkled i little powdered sugar on them once they were cool because i did not use the 1/4 cup of sprinkles ( i thought it was just too much for my taste ) and they werent that sweet , it did the trick for me !

    If I were to not use the cream cheese in this recipe, should I substitute it with something else (more egg or butter..?) or is leaving it out entirely okay?

    Do I have to add the powdered sugar on the outside? I thought I had some, but turns out I don’t! And walmart is out of the question on Thanksgiving!

      If you have regular sugar you can put it in a food processor and make it into powdered sugar, or just roll it in the regular sugar, that works too
